The sign outside the Nashville outpost of Chef Sean Brock's Husk Restaurant reads: “A Celebration of Southern Ingredients.” And that means ingredients of all kinds, from pig — Brock placed third in the World Invitational BBQ Championship in Memphis as a member of the Fatback Collective team — to forgotten staples of long-ago Southern kitchens like benne seeds, flint corn and Sea Island red peas, grown in restaurant gardens. Lunch and dinner menus will change every day depending on what local growers have to offer, and be cooked in an open kitchen at the center of the Victorian mansion that was once home to Richard Dudley, the 50th mayor of Nashville.
