Goldberg Brothers and Merchants Chef Create Local Sandwiches for LP Field Game Days

Let's state for the record that stadium food doesn't always have a great reputation.

First, it's a monopoly, which means that you, the captive sports fan, don't have other dining options once you go inside. They've got you. Second, given that 68,000 people might show up on a Sunday at LP Field (depending on how the Titans are doing), anyone providing food services has to be able to churn grub out in a hurry.

So Bites was happy to hear that Centerplate, which handles all of the hospitality services at LP Field, has tapped Strategic Hospitality, which owns Merchants and The Catbird Seat, to develop two sandwiches for NFL game days, using local ingredients.

“Benjamin and Max Goldberg of Strategic Hospitality really have their finger on the pulse of Nashville right now, so it really was a perfect fit," said Centerplate's John Sergi.

Merchants executive chef Jason Brumm has developed two different sandwiches for the project: a brew-pub sandwich of either roast beef or turkey with green tomato chow chow and a Yazoo beer mustard, which will be served at two locations on the upper level; and po'boys made with sweet-tea-brined pork, buffalo turkey and roast beef, which will be available on the club level. The beef and pork will come from Bear Creek farms in Leiper's Fork while Kenny's Farmhouse in Barren County, Kentucky will provide the cheeses.

Even though Strategic Hospitality runs a number of restaurants, the scale of the task is daunting.

"When we created and conceptualized these sandwiches we had to anticipate them being offered to 68,000 people at once," Ben Goldberg told Bites. "For this reason we had to try and make the sandwiches as delicious as possible with using as few steps as possible in the sandwich assembly process. The recipes are prep-heavy and require work on the front end, but in terms of actually executing them on game day, we were careful to make sure the sandwiches did not just work on paper, they were practical as well."

The sandwiches will be available beginning at the Titans' home opener Sunday vs. New England.
