Best Gyoza

Ken's Japanese

Potstickers are the perfect food: firm and yielding on the outside, savory on the inside, spiced with the tang of a good dipping sauce. Just about any dumpling on a menu calls my name fetchingly, but the Japanese variant—gyoza—is the ideal form, lighter and spicier than its Chinese takeout cousin. Is the pork-filled rendition at Ken's in Midtown really the best gyoza in Nashville? Who the hell knows, but it's a standout member of the species, and if giving Ken the nod surfaces demands that we sample other contenders—well, let's just say the gyoza-tasting bus is gassed up and ready to roll. —BRUCE BARRY
