Work on Apparent New Jonathan Waxman Restaurant to Begin



Let the construction of New York chef Jonathan Waxman's new Nashville restaurant begin.

A permit was issued today for Hannah Constructors LLC to execute a $500,000 rehabilitation and conversion of the Ultimate Tire store at 1210 McGavock St. to "full-service restaurant use." Plans for the restaurant, submitted by b3 studio in December, show space for up to 144 seats plus a bar.

The owner's name is "1210 McGavock Street Hospitality Partners, LLC," located at 364 Riviera Drive in San Rafael, Calif., the home of Howard Greenstone. Greenstone is on the board and served as the CEO of Rosa Mexicano, which hired Waxman as a consultant for the Rosa Mexicano restaurants in 2012. The pair toured Mexico City taquerias as research for Waxman's menu overhaul.

Greenstone stepped down as president and CEO of Rosa Mexicano to start a new venture last fall. The other contact name on the permit is Raymond Fischer, currently Rosa Mexicano's VP of real estate and development.

"TBA NY celebrity chef"? Last year at Music City Eats, Waxman spoke glowingly about Nashville, the area's farms and the city's restaurant scene. What better place to kick off a "series of American bistro style restaurants" than Music City?

If it walks like a Waxman and talks like a Waxman, it's probably a Waxman, right? We'll see soon enough.

Waxman, a veteran of Chez Panisse and Michael's on the West Coast, shot to fame with Jams in New York City and has opened a number of restaurants (including Bud's, Hulot's and Table 29). He is currently the owner of Barbuto in the West Village.

Efforts to reach Waxman and Greenstone were unsuccessful.
